I've seen parameters like "mod wheel latch" and "cv latch", but I haven't seen anywhere on Google that actually explains to me what it does. Could someone help me?

hello,

i think 'latching' comes in handy when using guitar and kuassa amps RE
like with a 'stomp pedal'

hopefully somebody more smart will chime in

MW Latched means that current MW value will stay same as long as you hold note, and it holds current value until next gate triggers

Exactly - you can also think of it as a ‘sample and hold’ with the mod wheel being the source signal and the note being the sample ‘trigger’.
Every note you play takes the current mod wheel value, samples it and holds it until that note it played again.

Just like the latch on a gate in your backyard fence. The latch stays on until your disengage it.

The bypass switch on a guitarist's effects pedal is a latch. Tap it once to bypass. Tap it again to un-bypass.

A sustain pedal is NOT a latch. You have to hold it down to make it work, and if you let go, it disengages. This temporary action is sometimes called 'momentary'.

My pleasure. The "mod wheel latch" and "CV latch" are features commonly found in music production and synthesis. The "mod wheel latch" allows you to lock the modulation wheel in a specific position,fnf while the "CV latch" holds a specific control voltage level, providing sustained modulation effects and control in your music.
