I’ve got a few pieces of jamón bones left from the colder months and I figured I’d better use em up before the next ham season starts.
So I boiled the hell out of one to make a stock, then cooked chickpeas in the stock, then added it to fried onions garlic and peppers w herbs n stuff to cook for a while longer. Then ate it with roasted cauliflower, tomato salad, etc.
Life it’s complicated down here in the sunny south of Spain but the food ain’t.
I may nearly be cooking up to my full potential

Here's what I am NOT eating these days: Nectarines from the United States.
In Canada, we have Country of Origin signs for our fresh foods. I bought a couple of US nectarines - they were the size of grapefruit. I thought that they might be mealy and bland - which is why I only bought two. Well, that and they were HUGE... They were not bland, but unfortunately they tasted sSOOO sweet like there were 10 tablespoons of sugar in them. Sugary sweet and no nectarine taste. Dreadful. Tossed.
The Canadian ones were good. I have eaten a few dozen already this season.

hello,

i love watching matty matheson cooking videos (i like him quiet and peaceful and i like when he's stupid crazy)
i also like watching glen and friends cooking videos

here is nopales



i am going to ask one of my friends in New Mexico to walk into their back yard
and pick some of these and mail them to brooklyn

i've read nopales are very healthy

nopales and rattlesnake tacos

i got a jar of nopalitos (cut and pickled)
but the jar says 54% salt (less if you wash before using)

i bookmarked 20 nopales recipes for future use

and here is anthony bourdain (rip) with iguana tamales



and then this one showed up: a very interesting watch of hispanic culture
and how bourdain recognizes the mothers of his nyc chefs is fascinating



giving the turkey a shot of tequila before the deed is priceless

next up is lengua tacos with a mango / pinapple / chile salsa
people have said that if a taco truck serves tacos de lengua
it is probably a very goodgood taco truck

hello,

i am looking for someone living in the SouthWest united states
or mexico or wherever these things grow
to get me some cactus 'nopales' and/or 'prickly pear' fruit

i wish i knew at the time they were edible
the whole thing (except the thorns)

they are some tips and tricks to picking them
and then they have to be shipped overnight to brooklyn, ny

hello,

a friend here in brooklyn gave me an address to a mexican grocery store that sells nopales

so i'm goodgood for now

growing up, my mom's house had a plum tree and a peach tree and a small garden of vegetables

sliced peaches and plums on top of vanilla icecream

regarding canada, matty matheson and 'glen and friends' cooking shows are wonderful to watch and also good recipes
personalities are mostly total opposites between matty and glen
it would be fun to see them do a collaboration recipe episode

We had peach trees when I was a kid. Loved em. My grandfather used to put them sliced in a big jug w white wine. Jed drink the wine and I’d eat the peaches. Was great.

Otherwise I’m onto the parmigiana again. My daughter loves it so I make it every weekend these days.
I’ve turned into my grandmother. I love it.

But here in Spain I’m making it w all sorts of local ingredients. Wild rosemary rather than basil, something like semi cured goats milk mozzarella, and this really gnarly grated sheep/goat cheese.
They’re turning out amazing.
Got a friend w a wood fired bread oven. I wanna try baking it in that.

i almost have the confidence to try making cheese
i'll probably start with paneer



i've got a recipe for fermented mango wine that i want to try

i'm roasting heads of garlic and fingers of ginger in the oven now
the apartment is beginning to smell goodgood
(instead of burning incense, just roast food or reduce a stock)

here is chef john making mini quiches
his sense of humor and word play in this video is eggcellent
and this is from 2013 (iirc)



and here is babish making the dalgona wafer from squidgames



maangchi also made a dalgona, but she added mixed nuts

which brings me back to greek pastelli recipes

Cheese is easy and not. It's nuanced for sure.
My dad and grand patents used to make mozzarella and it looked tricky but doable. I've not tried it myself yet but I do make ricotta wich is really easy. PAneer should be similarly easy.
I say yeah, get in there. But remember the full fat non-uht milk. Stuff won't curdle properly without it.

Tomato season's about done now where I'm at.
But over the past few weeks I've cooked I can't tell you how many kg of tomatos down into a kind of crude pasata. Just to do something with em before they go off. My old neighbour (spitting image of my late grandpappy) had me over there picking with him or just leaving buckets of the things outside the back door. It's kinda mad but I've got a freezer full of tomato funk to last some time now.

So nowadays I eat a banana for breakfast most of the time and a boiled egg in the afternoon. Dinner is usually something with meat or fish and veggies. No potatoes (or very rarely). No bread (or very rarely). If I want to eat something else it's usually these thing fibery cracker like things we call "cracottes" with an absolute minimum in carbs. I just put on there what I usually would put inside a double sandwich. It works great, I can tell you that.

Granada (pomegranate) season down here in the campo. Bleedin things are falling off the trees.
Pretty great juiced into gin.
Kinda like a cross between beetroot and cranberry juice but no need to add sugar.

hello,

still wating for phasys to post his boiled egg recipe

here are a few cuban food videos
i thought i only liked mark wiens and mikey chen
but this guy holds some weight
and has some goodgood jokes and legit history of where he's traveling
my mom and brother just visited me in brooklyn and i made cuban sandwiches with plantains
very enjoyable

i have alligator meat in the freezer







it's also interesting that the cuban sando was invented in florida, not cuba

the white guy used to be overweight...i'm at 17.7% body fat / 6'2" / 180 lbs

hola,

another mexican food video from mark wiens
this one is an hour long
and so much extra life stuff going on than just the food
and mexipappi is holding his own

i have more pork marinating in the fridge for another round of cuban sandwiches
fried plantains and okra and an avocado
using briocche rolls this time instead of cuban bread
still trying to find larger bolts for the tortilla press

the taco truck down the street is doing great business here in brooklyn

hello,

the video does have a lot of curse words
it is really funny what he talks about and the editing
the comments get going about the 'origin' of tikka masala



i also made the pricklypear cactus juice
it is so delicious when chilled
it is thicker than i thought it would be
15 pricklypear cactus yields 1 quart of juice (with a 1/2 cup filtered water)

just found this one, too
it goes well with an indian nahiri / nahari recipe
it takes me 3 different food markets to get the ingredients

matty is very loud and funny in this video
but a veryvery goodgood recipe

Diabetes almost killed me or came close to being more deformed.

Now I have lists of what not to eat. When I walk by the bakery dept. I just think that is death staring at me. I still walk through the bakery, cereal, and candy aisles like someone who broke up with a girlfriend and still looks her up online just to see how shoe looks.

Also having high blood pressure means Asian and Mexican foods are off the list unless I make my own.

I have to read labels on all food now. If I paid attention to DAW manuals like food labels I would the DAW guru.

i read today that persimmons are goodgood to eat for diabetes
i did a deep dive on recipes and found some good ones: salads / tacos / vinegar

i cook all my food
i read all ingredient labels
i make my own bread and pasta
avoid soy

i enjoy when other people post what they eat in this thread because it is goodgood for ideas

it's difficult to follow what they're joking about and the recipe at the same time
again, it is somewhat vulgar
but the dynamics between the 2 hosts is exquisite
if you have 30 minutes to spend watching
it's like a sitcom
the guy promotes his webapp which is kinda boring
but that's what artists do
like should i promote on soundcloud or bandcamp etc

it is a banger of a recipe for shrimp and grits
a keeper for me

Been slow cooking a beef cheek casserole all day. Very simple - just onion, garlic, red wine, tomato, carrot, potato & celery in addition to the meat. Getting pretty excited about dinner
