Is there a way for to note to silence after a keyoff in the Umpf

Setting "Release" to 0 in sample parameters should do the trick. Unless I'm misunderstanding what you're asking for.
Curiously it does not, the note does does not cut off (volume) when the note ends in the sequencer, I don't know if I'm doing something wrong but the attack hold release just seems to manipulate the sample it self, not the amplitude like ASDR from a sequencer trigger

Use a VCA after the Umpf or directly control the level of the mix channel with the same gate data you use for trigging Umpf..

Janitor gives you good control as you can control the decay via CV.
Murf ADSR is good is you want more of a shape.
If you want a square gate Thor Step sequencer is good for that, trigger the Run in Step mode and set the length.
These are all free.
Panda's Shape or Frame CV are great paid device for this sort of thing.

You could even trigger Europa to create some custom drawn envelope, send that from it's CV out etc.
