There are cameras with built in IR LEDs, but since they're on axis with the lens, they give you that creepy deer in the headlights look. Shouldn't be too expensive to create your own version of Paranormal Activity. Quality should be enough for educational puroses.

I didn't mean to make fun of your situation if it came across like that, sorry!
It's just that the videos themselves look indeed creepy, I've seen the video feed over at a friend's house when they were occasionally checking on their sleeping baby in another room.
So the biggest challenge is to find a camera that records a whole night and allows you to watch it afterwards. Maybe the wildlife cameras are the way to go, since they only record if there's movement and don't need any connectivity:

There are also cameras like that, which allow for monitoring /security once they detect motion, but I'm not sure how you would record videos with it:
