Does anyone have any recommendations for downloading sheet music? Should I just check book stores or is there a good site with a nice variety of pop, classic, folk and so on? I have worked on converting some midi files but the selection and quality is limited.

The best option would to be to learn how to compose with like sibelius or notion. or a built in score editor.
Some stuff you will just not be able to find, only create.
Producer/Programmer.
Reason, FLS and Cubase NFR user.

It's a worthwhile free score editor but, better than that, their website hosts loads of user-created scores for all sorts of stuff.

You can use scribd's 1 month trial, it's got quite some scores available
