Is there an easy way, maybe a particular device or rack extension, to invert a CV signal?
The Spider CV Merger/Splitter also has inverted outputs, so you can simply use one of those to invert the signal.

Also can use Thor (added bonus of using the Rotaries as attenuators)

^^jam-s^^ has exactly what you need. But just so you know, there's a FREE utility called Janitor that can give you inversion but also scale and offset your CV signal. It can also add lag, a way to soften CV transitions (e.g. portamento). Sometimes these extra functions come in handy.
