I have a touch-sensitive keyboard (nektar GX61) that I'd like to have always play at max velocity. How do I do this? Is there a way in reason, or do I need to fiddle with the Nektar settings on the keyboard itself?

Probably best to do it in the keyboard. I think that one offers several fixed velocity options including a max (127) one. Look in the manual under "Setup Menu"

Yeah, I think you're right! I'm having a lot of trouble with the GX-61 though.

Here's the manual: https://www.bhphotovideo.com/lit_files/614223.pdf

I can see the 127 option in the manual, as "Numeric number 5" on page 9.

The manual has this instruction: "Enter the value corresponding to the velocity curve you want (1 to 7) using the white number keys spanning G3–B4 (G4-B5 on GX61)." This doesn't make sense to me, because the keys G4-B5 are ten keys, but they seem to want it to correspond with only 7 velocity curves.

Any idea on which key I should press to activate the 127 option?

There are numbers and mode names printed above the keys. To enter 5 you would press the highest E key (E5)

So you'd press "Setup" to enter Setup Mode, G#1 to select Velocity Mode, E5 to set "Fixed 127" then C5 to confirm the selection and exit Setup mode.

Oh my goodness, thank you!!! Yes, it was E5 that did the trick. However, for the sake of anyone reading this later, it was in fact C6 that I needed to press to confirm my choice.

You could do it in Reason with Delta Midi Computer. If you wanted it per patch.
