How many of the VSTs I have running on Catalina are likely to stop working?

Only you can answer that.

Best thing to do would be write a list and then go check each of them on their support page.

Don't just assume.

I'm more concerned with my hardware breaking. I'm using some ancient Emagic AMT/EMT midi interfaces which have been working trouble free for years, but BigSur prevents them from working supposedly. So I installed BigSur on my non-music 2018 MacBook, and I'm going to start testing things little by little. So yes, the Emagic interfaces didn't work. Luckily there was a very easy workaround. The next thing I'm going to test is my Steinberg URmkII. If that works then I'll feel better about updating to BigSur - but I'm only going to go through with that when Logic stops working on Catalina.

I am aware of some key plugins working on BigSur though - all Spectrasonics, all U-he, Plugin Alliance, PG-8x, FM-8, Waves V12 & V11, Dexed, Kontakt. Those plus all of Logic's Instruments & fx would be enough for me.
