They're great instruments, I've gotten a ton of use out of them. They're very fun to play and also allow you to get extremely in-depth with automation and keyswitching if you want to go for ultra realism.
If you're looking for an acoustic, Evolution Steel Strings is probably the most versatile option due to its inclusion of both picked and fingered articulations.
For the electric guitars, the Rock Standard, the Strawberry, and the Texas Twang (despite the genre-specific name, it's just a Telecaster) are excellent all-rounders that can serve equally well for rhythm and lead playing in all sorts of styles.

Which one sounds both natural and sits well in the mix (enough transients to be heard and not too much thick resonant body)?

I tend to use songwriter the most acoustically, but this is only because I love the sound of it. I'm not sure it would be the best for layering as it is pretty full.
