Solution: I'd created a Midi Surface instead of a Midi Keyboard so the note data wasn't being used.
I'm trying out Jam Origin's Midi Guitar 2 which is a polyphonic guitar-to-midi-converter. It's actually pretty impressive, but getting the midi data it outputs into Reason is proving to be problematic.
The first thing I tried was assigning its output to a midi channel and using Reason's Hardware Interface > Advanced Midi to assign this channel to a device. This worked great and I could play the instrument via my guitar, however when it came to record, the midi data was not written to the sequencer no matter what I tried.
The next thing I tried was to use Preferences > Control Surfaces to attach a new surface. I clicked Add and Find, then played some notes which showed up. However even if I choose 'Lock Surface to this device', the midi doesn't play the instrument and isn't recorded to track.
