Can you overwrite the default project/initial patches?

Initial patches no, but you get the choose under preferences if you want to load a default patch or not.
You can create your own song templates and you can store them under the template directory. (simple way to get to it is click on the menu "File", "New From Template", bottom option "Show Template Folder")

Could also create your own "initial" patches and just load them before you start tweaking.

And in preferences, you can select which template will automatically load each time you start a new .reason file.

I've been doing the favorites approach for years now - it's not perfect but it beats not having any option for this functionality.

Duuuuuuuude. Never even thought about that. I mean I do it when I specifically want to use one of my patches but never for just starting something random. Usually just reset it and start from scratch.
