Hey guys, I'm looking for something with an automatable knob to generate bipolar CV and wondering if there's something in the rack that I'm missing?
Also, is it just me that wants another few rows of knobs and buttons on their combinators? lol

Thor can easily do this by assigning a Rotary to a CV Out, and automating the Rotary, but this is "uni-polar". To make it bi-polar, double assign the Rotary to the same CV output, AND use a Button assigned to that same CV output set to -100 (and make sure the button is ON!).

For you math nerds, this is the basic uni to bi conversions: Input x2, -1.

And "obviously" I'd be remiss is I didn't also mention Selig Gain as a bi-poloar (or uni-polar) CV generator that can be automated!

There are some cv generators in the store... Alias8 has bipolar faders, ModPanel has bipolar controls, too.

check out those links! If I understand you correctly, they should fit your needs :

Thor buttons usually enough for CV generation.
If not enough - 12 button at A/B 12 Switch panel.

Usually, if not need a lot of cv, I take no Thors, but instead it is better to m-class compressor. Connect the cv output cable. Input and output level is bipolar cv generator knob. :D

Cool - never knew it could do that (learning something new here). But it's not bi-polar (and never quite reaches full 127 level, sticking on 126 fwiw)… ;(

Blamsoft's kn0b would be perfect for this. Unfortunately, it is still in development and won't be completed for some time. It has proven very difficult to get the CPU usage under control without support for AVX instructions. http://blamsoft.com/rack-extensions/kn0b.
