Even including GarageBand, which is considered a beginner's piece of software...I can go on about the things GarageBand has, even as entry level software, such as full MPE support...
As far a display while the sequencer isn't moving, I'm sure something out there exists? I wonder what the video creator you linked to is using, if not editing that for the video...
Maybe you could suggest the idea to a developer as a Player MIDI monitor...
Perhaps Static Cling or Selig could update their Players to include a score view?

I don't know about that software but I have been using scan-score.com program. Well it works pretty good and the prices vary depending on what features you need.
