Grew up with Indian food. Big part of Glasgow culture. Lot of Indian friends. Used to cook a lot of different Indian food at home. Curries, daals etc. When we moved to Sweden it was almost impossible to find ingredients. Eventuality found a supplier in Mailmö who does mail order so now it’s big parcels in the post every month or two .

i have a collection of different lentils / peas to make different curries with rice
my ex girlfriend is from guyana
she would always make daals / curries with roti
she taught me how to eat with my hand
when i went back to albuquerque to visit my mom and step dad
they looked at me funny when i started eating with my hand
i also just got a japanese curry powder i'm looking forward to use
the biggest thing i learned about making a goodgood curry
is you have to 'banje' or cook / bloom the spices in oil before you start moving ahead
people who put raw curry powder on popcorn are weird

Yeah. You need to fry the whole spices first. Absolutely. But not bay leaf. It goes weird. Def not dry chilli. Your nose will go weird. And your lungs.

Black coconut pork rib curry.
2kg pork ribs
1 onion
Head of garlic
1cm of ginger all chopped fine.
Ground spices:
1 heaped tsp (fuckin heaped, right) dark roasted curry powder (Sri Lankan style)
Half tsp of turmeric and ground fenugreek each
Tsp corse ground chilli
4 bay leaf (not ground but put in this group)
Kasoori methi if you’ve got it. Big pinch
Or curry leaves if you have them...even better.
Whole spices:
2cm crushed cinnamon
Tsp of black pepper corns
2 crushed star anis
Tsp black mustard seeds
5 cloves
Brown the ribs in coconut oil and put aside.
Fry whole spices for couple min. in the coconut oil.
Add onion and fry till soft etc
Add garlic n ginger for like a min
Pour in about a pint of coconut rice milk
Put ribs in
Salt
Slow cook for about three hours till meats falling off the bone.
Eat w rice and smile

question: oven temp? (i do not own a grill / i have a gas oven that fires from the bottom, not the top)
question: are you wrapping the ribs in anything (foil / butcher's paper)?
question: are you cooking the 'whole slab' without cutting the slab into halves or anything like that?

I cook them in a bog pot like a stew. Like a curry. On the stove top.
Don’t worry about the methi leaves. It’ll still taste good.

In my experience chicken curry is Asian and curry chicken is Caribbean. At least in the U.K.
I like em both. But if you’re going Caribbean I’d sooner opt for curry goat or strewed chicken. But really who cares. Caribbean food is all feckin great.
Going back to England soon...for a bit...and I’m gonna fill up on that stuff in london. Woop woop!
