@rorystorm: glad you're feeling better / i got the one and done johnson and johnson here in brooklyn so when my mom and brother came out to visit we could go places
saw jeff daniels on broadway as atticus finch for 'to kill a mockingbird' / wonderful performance

Thanks man! Yeah it gave me a little bit of insight into what the real deal would be like and how terrible it is. Its starting to be serious where I live, in New Zealand, and I'm expecting to be back in lockdown again before Christmas.

hello,

turkey day was divine
now gearing up for the christmas holiday menu
i'm thinking of going with 'the feast of the 7 fishes'
gathering recipes / videos

my crazy idea is to combine it with a guyanese '7 curry' that is usually served at weddings

anyone here have favorites of either menu?

i'm almost done fermenting the ingredients for a jerk chicken marinade / hot sauce
planning on filling up little bottles with hot sauce to send to family for christmas

the books i read are all food related
if i go into manhattan from brooklyn, i'll take a cookbook to read

No. Aside from Jamaican friends in london I have nothing.

Anyone tried a little knob of butter or coconut oil in coffee? Strong stuff or espresso.
Highly recommended. It just enriches the whole experience.

on his youtube channel he has a large bowl of emotional support butter on the kitchen counter all the time

For breakfast this morning after a 24 hr fast, I sliced and diced a clove of garlic and two small mushrooms, sautéed in butter, added two whisked eggs and 4 slices of smoked cheese.
Made an omelet.
Ate it so slow and RN I feel so full.

i am trying to compete with walkerwoods jamaican jerk seasoning to send to my brother who really likes jerk chicken and has an actual outside gas grill
the sauce split, so now i'm researching how much 'xanthan gum' to add to thicken said sauce
right now, it has a very front bite on the tongue and stays with you for several minutes, not bad for a first time

hello,

while getting into hot sauce making
i have been diverted into making vinegar, jams, and sorbets

here is vinegar made from beer website
beer vinegar is very big in germany and bavaria
you use finished beer and a 'mother' from another product
and it ferments on your countertop

at the end of the video he says 'hands down, this beats any store bought malt vinegar'
great on fish and chips

i found this website while studying hard trying to find out the relationship of specific gravity / brix / baume scale readings
so i can make a goodgood sorbet without trashing the ingredients with the wrong amount of sugar

math has never been one of my strong points

i'm starting out with just a plain watermelon sorbet
i plan on making separate flavors (watermelon / pineapple / mago / cactus / coconut)
and then mixing scoops, instead of blending ingredients into one mixture before sorbeting

any ideas of a sorbet?

@adfielding: never heard of a lamb and chicken dish together
i have 2 of the man's cookbooks (mostly vegetarian)
i just add some kind of meat

Strong black coffee for breakfast. Perhaps a cereal bar or some fruit. Snack in the middle of the day: low-calorie crisps, such as skips or quavers. I have a crisp addiction, and this satisfies it without going overboard. (Or, if you're an American, potato chips) More coffee for lunch. Couscous or soup, maybe wraps or pasta if I'm going to the gym later. Dinner: pasta, unless I had it for lunch, or rice and vegetables, fish cakes, noodles, stir fry, and so on. During the week, I rarely eat meat.

if i have it correctly: the guy has one arm and 2 artificial legs
right at the beginning it shows footage of the bomb blast in beirut
massive tragedy, yet the man shows how food brings us back together and helps to heal things

Bigos is great stuff. I grew up w a German Barbarian for a step father and he made variations on kraut that were good too but I think bios is better. I used to make it when I lived in London and had access to decent kraut and smoked pork things. Tricky in Spain.

In Bulgaria, in the mountains, they make this stuff called Kapama...which is like bigos risotto...only way to word it. Sour Kraut and pork things and chicken and rice all cooked together in a clay pot. Amazing stuff. Weird mix of Mediteranean and Eastern European food there.

Yeah, bigos is great. I used to eat it regularly in our student diner. Until I went vegetarian.
