What midi controller are you using? Does it have it's own little picture in the control surfaces list? Or did you use the " other-midi control surface" codec? I have an Akai MPK261, and it shows up in the control surfaces list. I don't think Override mapping assigns to different remote base channel...

1) There are remotable properties to shift the remote base channel of a channel strips so you can switch through the channels one by one or eight by eight. That way you can select different channels from your MIDI controller, always one at focus. Some remote codecs of mixer midi controllers do that...
