You can make key-switch setups using Thor as switching device using the two buttons and assign them to a key. Then route the buttons to cv out. With those cv-signals you switch on-off receive notes in your combinator.

As EdGrip already wrote, you need an envelope with multiple Attackstages. Thor only has traditional ADSR envelopes. But...you can modulate the attackcurve in the mod bus. So you can experiment making a modulated attack-curve, for example by using another envelop.

I still use Thor as my main device. I think it's still one of the best designed softsynth's out there.

If you don't have to play full chords, I suggest to try Neptune. It can pitchbend audio.

I once had similar issues with my Nordstage. In my case it was caused by local on/of settings. It seemed to mirror notes in a way.
I don't know exactly anymore, because it is quit some time ago.

Using a combinator you can switch on/off receivenotes with CV input. you can use the Thor modmatrix to setup. Asigning a key to one of the buttons. Route that button to CV out and then CV-out to the particular CV-in on the combinator.

Indeed try to use an NNXT or NN19. Those samplers tune the samples to the key. Uncheck the 'receive notes' option of the sampler in the combi. That should do the trick.

You can also try to quantize both tracks, but my experience with doing so is that it is harder to get both track synced to each other.
